Why does the schematic only include CN10?

The footprint matches nicely while the schematic only consists of the one connector named CN10

Indeed. In the symbol viewer on the part page, you can only see the CN10 connector. However, this is just a preview.

Once you download and import the symbol to your EDA tool of choice, you'll see that the symbol is just divided into sections:
